Good For:



  • 1 cup quinoa, rinsed
  • 1/2 cup sliced almonds
  • 1/2 cup coarsely chopped apples
  • 1/2 cup coarsely chopped dried apricots
  • 1/4 cup toasted sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup raisins
  • 1/2 cup maple vinaigrette

Maple Vinaigrette

  • 1/3 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey mustard
  • 2 tbsp canola oil
  • 2 tbsp water

In a saucepan, combine quinoa and 2 cups of water, bring to a boil over high heat, reduce to low.

Cover and allow to simmer 20 mins. Stand 5 mins, then fluff with a fork.

Transfer cooked quinoa to a large bowl and add the rest of the ingredients and coat with maple vinaigrette.

Maple Vinaigrette

In a jar, combine maple syrup, vinegar, mustard, oil, and 2 tbsp of water.

Shake well.

Store in fridge for up to one week.

Makes one cup.
