Ingredients
- 2 cups dried pasta (fusilli of farfalle)
- 4 stalks asparagus
- 2 cups broccoli florets
- 8 oz mushrooms, chopped
- 2 green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp fresh chopped oregano
- 1/3 cup olive oil
- 2 tbsp lemon juice
Salt and pepper to taste.
Boil the pasta until al dente, rinse lightly in cold water.
Cut the asparagus into 1/4″ pieces and steam lightly with the broccoli until just tender (about 3 minutes). Rinse in cold water.
Lightly saute the mushrooms.
To a large bowl add the pasta and all of the prepared veg.
Combine the olive oil. garlic, lemon juice, and salt and pepper in a small bowl until slightly creamy.
Dress the pasta and allow it to stand for at least an hour before serving.
